Honey
‘Unity’ is not just a name but a philosophy that permeates every aspect of the new cocktail offerings at Sexy Fish Miami. Inspired by the concepts of “Joy that’s a whole” focusing on one flavor. Each drink is a testament to the skilled craftsmanship of the bar team, aiming to provide a mindful drinking experience that appeals to both spirited and non-alcoholic preferences.
The ‘Unity’ menu features an impressive selection of 24 cocktails, including 12 alcoholic and 12 non-alcoholic options. Each cocktail is based on one of 12 core flavor profiles, allowing guests to choose their preferred base flavor. For instance, the Honey, made with Brown Butter Infused Brugal 1888 Rum, Honey, Citrus Oil, and Dry Vermouth. Its non-alcoholic counterpart incorporates Bee Pollen Infused Martini, Non-alcoholic Floreale, Honey, Citrus Oil, and Apple.
Coffee
In addition to the standard menu, Sexy Fish Miami introduces several exclusive flavors tailored to the local palate, including lime, goldenberry, and coffee. To make the Coffee cocktail first, they infused the Don Fulano Tequila, mixed it with their spiced coffee liquor with Reposado Tequila, add the Espresso. a little bit of agave, and later served with a wonderfully creative and tasteful garnish. As the Bar Manager, he now enjoys the creative aspects of his job. This role challenges him as a professional, but it also allows him the freedom to innovate and explore new ideas. For instance, he might develop a plan for the entire year, oversee daily operations, organize Pop-ups and invite Guest Bartenders, create new cocktails or design an entirely new cocktail menu. While these tasks can be complex, he and his team always tackle them with enthusiasm, drawing inspiration from classic techniques. On the other hand, he also takes pride in educating his team, no matter how small the lesson may be. Supporting their growth and development brings him great satisfaction, making his job all the more fulfilling.
“I have observed a significant growth in the industry, however, I strongly believe that individuals working in it should invest time in studying, preparing, and treating it as a dedicated profession. It is imperative to prioritize respect and responsibility over solely focusing on monetary gains. It would be great to witness Miami’s bars securing a position in the top 50 bars, which would enhance the city’s reputation. Many individuals are working diligently towards achieving this goal, and I am confident that with time, we will continue to progress and excel.”

Rensel’s strategy for The Sylvester is to create an atmosphere that encourages learning and experiences. Every month he hosts Industry takeovers, Master Classes, and educational seminars from great bars around the world. His goal is to create an environment where customers and colleagues can come together, learn something new, and enjoy some great drinks in the process.
Rensel shared that he is driven by the fact that he is still in the early stages of his career. Despite having worked in hospitality for five years, with only two years as a bar manager and three as a bartender, he feels that there is still so much to learn. Recently, he and his bar have been presented with several opportunities to do pop-ups in various locations around the world, including New York, Arizona, Puerto Rico, and Norway. Rensel sees these opportunities as a chance to broaden his knowledge and bring back new ideas to apply to his bar program at The Sylvester.
Soon to become a father, he knows that balancing work and family life will be a new challenge for him. Despite this, he remains committed to running his successful Miami bar, The Sylvester, and continuing to offer classes for those interested in the hospitality industry. Rensel also mentioned that they have exciting events lined up and encouraged people to follow him on Instagram at 
In an interview, they were asked about their journey in the hospitality business. Dani shared that she started in the industry back in 2005 when she moved to the US from Brazil. Her first job was as a Hostess at an Irish Pub in NYC, where she learned a lot about hospitality, networking, and work ethic. She worked in Irish bars for 11 years in various roles, from hostess to bar manager. In 2013, she moved to Miami Beach and discovered her passion for craft cocktails. In 2018, she decided to focus on learning the craft and left the “Dive Bar” life. She finally got the opportunity to become a Bar Manager in 2020.
John’s journey began when he was young, and he used to visit a local bar in Pinecrest to eat chicken wings. One day, he stumbled upon an opportunity to work there, and he jumped at the chance, despite not being of legal age to work. From that moment on, John found his calling in the industry and has been passionate about it ever since. He considers himself fortunate to have found a career that he loves and is always eager to learn and grow within the industry. He’s inspired by the innovative ideas and people he encounters, including bartenders, chefs, and barbacks, that keep the fire of passion burning within him.
This dynamic duo holds the same Brand Ambassador title but they both have individual contributions to Angel’s Envy, John and Dani have distinct styles while sharing a similar mindset. While Dani focuses primarily on Miami Beach, John covers the mainland, which are two distinct territories within the larger market. Given the differences in their respective accounts, Dani and John work on building their brand identities tailored to the expectations of Angel’s Envy and their accounts. Despite the varying approaches, their efforts have resulted in positive outcomes, as indicated by the numbers. “Dedication is the most significant aspect in my view. It requires a commitment to go above and beyond to meet the needs of your partner, even if it means achieving the impossible. Consistent support is essential, and mutual interest in growth should be a shared goal. In my opinion, these are the fundamental components of a prosperous partnership” shared John. 
John was asked about his favorite aspect of his job, whether it was creation or education. He found it difficult to choose just one, as he enjoys every aspect of his job except for administrative work. His activations are particularly enjoyable, as they involve organizing events that bring people together based on shared interests and passions. However, he takes the most pride in his work on education, as he wants both consumers and trade to have a deep understanding of Angel’s Envy and all of its selling points.
As she navigates the Miami scene, she has been given a lot of wonderful advice from its veteran members. “Be yourself, take chances, never be afraid to reach out and ask for help,” says Christine. “There are a lot of people in the industry that have ‘been there, done that’ and have a ton of knowledge to share.” Being herself is powerful advice for Christine who has been Top 4 US Bartender of the Year at TOTC for two years running, Top 4 at Speed Rack National Finals, and featured on Jimmy Kimmel Live. Still, Christine has other dreams and aspirations that motivate her, pushing her forward and ensuring her constant growth as well as success. Her goals are limitless with the Bar Lab team. They have a ton of things up their sleeves. Because the Miami scene is quickly growing, there are countless opportunities that increase as more people move here and help grow this city into an even more diverse scene, so that all cultures are represented in the remarkable Magic City.
