The Sylvester, the maximalist mischief-maker known for its nostalgic aesthetic and anything-but-boring drinks, is launching an entirely new cocktail menu built around the classics everyone keeps ordering — martinis, spritzes, margaritas and highballs — each reimagined with a distinctly Florida man twist.
At first glance, the menu feels familiar. But dig a little deeper and you’ll find playful tropical flavors, high-level techniques and just enough chaos to make it unmistakably Sylvester.
Classics, But Make It Florida
The new lineup features 10 original cocktails alongside two beloved staples: the spicy passion fruit margarita Vaxxxed & Waxxxed and the clarified cult classic Albino Gator.
The balance? Approachability meets creativity. Think classic structures infused with Florida ingredients, tongue-in-cheek names and techniques like clarification and carbonation that elevate each drink without overcomplicating the experience.
“This menu is exactly who we are,” says Rensel Cabrera, Bar Manager at The Sylvester. “We wanted the drinks to feel approachable, a little silly and undeniably fun, while still showcasing the level of creativity, skill and technique we’re capable of behind the bar.”
As the bar continues evolving into a higher-energy, club-like destination on weekends, this new menu is designed to deliver complex cocktails at volume — without sacrificing speed, consistency or hospitality.

A guava pastelito-inspired cocktail built around Zacapa rum, guava and mascarpone foam. Sweet, creamy and unmistakably Miami.
B.B.L Martini ($18)
