Miami’s food enthusiasts mourned when Chef Rosado’s beloved Fi’lia at SLS Brickell closed its doors. But like a phoenix rising from the ashes, Chef Rosado has returned to the Magic City’s dining scene, bringing with him a treasure trove of culinary expertise and innovative vision to AHU | MAR.

As you step into AHU | MAR, the air is thick with anticipation and the subtle aroma of smoldering wood. The restaurant’s concept is a testament to Chef Rosado’s culinary philosophy—honoring the natural flavors of seafood while elevating them through the art of open-fire cooking.

However, the true standout among the appetizers was Chef Rosado’s Alcapurrias, a dish close to his Puerto Rican roots. We indulged in two versions: the Crab Alcapurria, featuring stewed crab, coconut, cilantro, and a yucca fritter, and the Spicy Salmon Alcapurria, with spicy salmon, black sesame, and a yucca fritter.

The shrimp ceviche was another highlight, with its creamy coconut-infused leche de tigre, perfectly balancing flavors. My personal favorite was the seared scallops, and the ribeye, with its robust, smoky flavor, offered a hearty counterpoint. The Arroz Negro Con Calamares, with its impeccable seasoning, was the perfect touch to an unforgettable evening.

To complement the exquisite dishes, the cocktail menu offered inventive creations that were both visually stunning and perfectly balanced in flavor. The wine selection was equally impressive, featuring a well-curated list that included both familiar favorites and rare finds, ensuring the perfect pairing for each course. Adding to the experience, a live music band provided a lovely ambiance with its rhythmic tunes, making the evening truly magical.
