Negroni Week in Miami: Where to Sip the Classic and Its Most Creative Twists

One of the cocktail world’s most iconic celebrations is back. Negroni Week returns to Miami, bringing together bars and restaurants across the city to celebrate the unmistakable combination of bitter, sweet and botanical flavors that has made the Negroni a global classic.

But this week isn’t only about the traditional trio of gin, Campari and sweet vermouth. Miami’s bartenders are taking the template in entirely different directions, exploring everything from mezcal and tequila to strawberry, sakura, corn, coconut and pineapple.

The celebration also supports Slow Food, Negroni Week’s nonprofit partner, whose work focuses on building a more sustainable and equitable food and beverage industry.

From Brickell to Miami Beach and the Design District, here are six Negronis worth discovering this week.

Sexy Fish Miami — Our DNA

Sexy Fish Miami takes the Negroni somewhere decidedly more tropical with Our DNA, a rum-based interpretation built around layers of coconut, pineapple and banana.

Priced at $18, the cocktail combines coconut-infused Havana Club, pineapple-infused Campari and banana peel-infused sweet vermouth. A red dehydrated edible pineapple slice and aromatic coconut spray complete the drink, adding another tropical dimension to the experience.

It’s a Miami-minded departure from the traditional gin-based Negroni while maintaining the bittersweet structure at the heart of the classic.

Seia — Negroni Cinquantaquattro

Fifty-four floors above Brickell, Seia approaches the Negroni through agave and modern technique.

The restaurant’s Negroni Cinquantaquattro combines Del Maguey Vida Mezcal, Casa Dragones Reposado Tequila, Campari, fig leaf, Cocchi Rosa and milk punch.

Clarification softens some of the cocktail’s characteristic bitterness while fig leaf introduces a subtle savory quality. Mezcal and reposado tequila take over the role traditionally occupied by gin, resulting in an agave-forward interpretation with a completely different personality.

The Joyce — Wimbledon Negroni

At the intimate 45-seat The Joyce in Miami Beach, Negroni Week gets a playful British-inspired twist.

The Wimbledon Negroni takes its inspiration from Wimbledon’s famous strawberries-and-cream tradition, combining Wimbledon Strawberry Sipsmith Gin, Campari, and Antica Formula Vermouth.

Strawberry brings a bright, fruit-forward element to the drink without abandoning the familiar bittersweet structure of a Negroni.

L’Atelier de Joël Robuchon — Sakura Negroni

At L’Atelier de Joël Robuchon Miami, the Negroni heads east with a delicate Japanese-inspired interpretation.

The Sakura Negroni brings together Roku Gin, Mancino Sakura Vermouth and Luxardo Bitter Bianco, creating a lighter and more aromatic expression of the cocktail.

Cherry blossom florals and citrus complement the bitterness of the drink, offering an elegant departure from the deeper red, intensely bitter profile typically associated with the classic Negroni.

Le Jardinier — Maize Negroni

Just nearby, Le Jardinier Miami explores another side of agave with its Maize Negroni.

The cocktail combines Espadín Capón mezcal, corn liqueur, La Quintinye Rouge, Campari, and Fino Sherry.

Here, smoky agave meets roasted corn and the bittersweet character of Campari and red vermouth, while Fino Sherry adds a dry, savory finish. The result takes the familiar Negroni framework into more earthy territory.

Le Specialità — Negroni Milano

After exploring mezcal, sakura, strawberry, and tropical infusions, Le Specialità brings Negroni Week back to where it all began: Italy.

The Milanese institution, originally established in Milan in 1977 and now reimagined in Miami, is serving the Negroni Milano, made simply with Sipsmith Gin, Campari and sweet vermouth.

Served over ice and finished with an orange twist, the cocktail celebrates the balance of bitter, sweet, and botanical flavors that turned the Negroni into an aperitivo icon more than a century ago.

Sometimes, innovation means knowing when not to reinvent the classic.

One Cocktail, Six Interpretations

Part of the enduring appeal of the Negroni is its simplicity: a three-part formula that has become an almost endless canvas for bartenders.

Miami’s Negroni Week lineup shows just how far that formula can travel. Rum and tropical fruit at Sexy Fish, clarified agave at Seia, strawberry at The Joyce, Japanese florals at L’Atelier, mezcal and corn at Le Jardinier—and finally, a return to the Italian original at Le Specialità.

Different spirits, techniques, and inspirations, all connected by the bittersweet DNA of one of the world’s most recognizable cocktails.

Negroni Week is happening now at participating bars and restaurants across Miami.
