Cantina Leon Brings the Spirit of Mexico’s Classic Cantinas to Coral Gables

A new era of Mexican dining has officially arrived in Coral Gables with the debut of Cantina Leon, the vibrant new concept blending elevated Mexican cuisine, mezcal-forward mixology, and the timeless energy of traditional cantinas. Located inside The Plaza Coral Gables, the expansive multi-level destination officially opens on May 21, offering guests a lively culinary experience rooted in connection, celebration, and hospitality.

Owned by Mexico-born Chef Gerardo B. De Negri alongside Jorge Barrera and operated by The Rabbit Group LLC, Cantina Leon draws inspiration from Mexico’s golden era of cantinas, reimagined through a contemporary lens with refined culinary techniques, immersive design, live entertainment, and a standout agave-driven cocktail program.

A Culinary Program Rooted in Heritage

Leading the kitchen is Chef and Owner Gerardo B. De Negri, whose culinary background spans from the vibrant street food culture of Mexico City to the refined kitchens of Paris. Joining him is Chef de Cuisine Jorge Delgadillo, originally from Hidalgo, Mexico, who helped shape the restaurant’s expansive menu and recipes. Together, the chefs created a menu inspired by the communal spirit of a traditional Mexican mercado, combining authentic flavors with modern execution.

Seafood takes center stage throughout the menu, beginning with signature dishes like the Shrimp Aguachile Tatemado, Tuna Tostadas, Ceviche Mexicano de Pescado, and the dramatic Torre de Mariscos — a seafood tower layered with shrimp, octopus, tuna, and avocado.

From the wood-fired grill, standout dishes include the Pescado Zarandeado, a whole grilled red snapper seasoned with coastal spices, and the Camaron Gigante Flameado, featuring giant black tiger prawns flambéed tableside with mezcal and garlic butter. Meat lovers can expect bold presentations with offerings like the USDA Prime 24-ounce Tomahawk Steak and the Filete Flameado al Tequila.

The Mixology Program: A Celebration of Agave Spirits

At the heart of Cantina Leon sits its striking central bar, serving as both the visual and social focal point of the restaurant. The cocktail menu pays tribute to Mexico’s rich spirits culture with a strong emphasis on tequila and mezcal-driven creations.

Among the signature cocktails is the timeless Classic Margarita, alongside more playful and contemporary offerings like the Oaxacan Jarrito, crafted with 400 Conejos Joven, tamarind Jarritos, agave nectar, and fresh lime juice. Guests can also enjoy the beloved Carajillo, blending Licor 43 with espresso for the perfect after-dinner cocktail.

Further elevating the agave experience is Cantina Leon’s dedicated tequila and mezcal tasting room, showcasing an extensive collection of premium spirits for enthusiasts and curious drinkers alike.

A Space Designed for Celebration

The restaurant’s design, developed by Maxielle De Jesus of DESIGNXTUDIO INC. alongside Chef Negri, serves as a modern homage to the iconic cantinas of 1920s Mexico City. Rich brass accents, marble finishes, ambient lighting, plush green velvet banquettes, soaring ceilings, and statement chandeliers create an atmosphere that feels both nostalgic and contemporary.

Spanning over 7,500 square feet, the venue includes a lively main dining room, an upstairs VIP area and private event space, and its sister café concept, Mercadito Cantina Leon, serving breakfast, coffee, tacos, and grab-and-go offerings daily.
