  • 1.5 oz Martini Ambrato

  • 1 oz Tomatillo Water

  • 2 oz Cinzano Prosecco

  • Raspberries

Directions:

  1. Combine 300 grams of raspberries and 1500 grams of Martini Ambrato in a sous vide bag, set the sous vide cooker to 60°C, and infuse for 3 hours.

  2. After cooking, refrigerate for a day, then strain using a coffee filter for a smooth, raspberry-infused blend.

  3. Pour the Martini Ambrato, Mijenta Blanco, and tomatillo water into a wine glass filled with ice, stirring gently to combine.

  4. Top with 2 oz Cinzano Prosecco and garnish with fresh raspberries.

a’Riva | Watermelon Martini

Ingredients:

  • 2 oz Sencha Vodka

  • 0.5 oz Combier Watermelon

  • 0.25 oz Giffard Raspberry

  • 0.75 oz Watermelon Juice

  • 0.75 oz Lime Juice

  • 0.25 oz Simple Syrup

Directions:

Build all ingredients in a tin shaker. Fill shaker with ice and shake well. Double strain into a Nick & Nora glass.

Maple & Ash| Illicit Affair

  • 2 oz Vodka
  • 0.25 oz elderflower liqueur 
  • 0.75 oz dragon fruit 
  • 0.5 oz lemon juice 
  • Cucumber & Basil  

Directions: Muddle cucumber and basil in a shaker, then add Grey Goose, elderflower liqueur, dragon fruit purée, and lemon juice. Shake with ice and double strain into a chilled martini glass

MIMI Chinese | Red Lantern

  • 2 oz Gin
  • 1.5 oz Watermelon Juice
  • 0.75 oz Watermelon Syrup (1:1)
  • 0.75 oz Lime Juice
  • 1 oz Strawberry Yogurt
  • 1 oz Milk
  • Top with Soda
  • Garnish with House-made Hawthorne candy lollipop

Directions: Combine all ingredients into a container and allow one hour to curdle then strain through a coffee filter before adding the soda water 

RosaNegra Miami|Mayan Passion

  • 1.5oz  Gin
  • 1.5oz Passionfruit Sherbet
  • 0.5oz Xtabentun Mayan Liqueur
  • 0.5oz lime juice
  • 1 egg white

Directions:  Build all ingredients in a tin shaker. Shake without ice to emulsify the egg white, then add ice and shake again. Strain into a chilled coupe glass.

Queen Miami Beach | Tokyo Rose (Image featured) 

  • 1.5 oz Tequila blanco
  • 1.5 oz Peach Calpico
  • 0.75 oz cane
  • 0.25 oz rose water
  • 1 oz Yuzu / lemon juice
  • 1 egg white
  • Top with ginger ale

Directions: Build all ingredients in a tin shaker. Shake with or without ice and strain into a Collins glass. Top with your desired amount of ginger ale. Garnish with a rose bud. 

Marion Miami | The Big Easy  

  • 1.5 Gin
  • 0.5 select
  • 0.75 Lillet rose
  • 0.75  lemon juice 
  • Strawberry
  • Egg white

Directions: Muddle a fresh strawberry in a tin shaker, then add Bombay Sapphire, Select Aperitivo, Lillet Rosé, lemon juice, and egg white. Dry shake, add ice, shake again, then double strain into a chilled coupe glass.

Vitolo | Lena Limone 

  • 1.5oz Vodka
  • 0.5oz Lemon Juice
  • 1oz Italian Citrus Oleo* (Citrus Oleo: oils extracted from citrus fruit peels)

Directions: Rim coupe glass with Tropical Hibiscus sugar. Add all ingredients to tin shaker, shake well, strain into coupe glass.

Sweet Liberty | Fancy Paloma 

  • 1.5 oz. Tequila Blanco
  • 0.25 oz. Cointreau
  • 0.25 oz. Select Aperitivo
  • 1 oz. grapefruit juice
  • 5 oz. lime juice
  • 0.5 oz. pink peppercorn infused agave nectar
  • 5 dashes pink peppercorn tincture
  • 3 dashes saline solution

Directions:  Shake and strain on Collins ice spear. Serve in an Etched Highball glass and top with Fever Tree pink grapefruit soda. Stir. Garnish with grapefruit slice and small pinch of smoked salt on top of grapefruit + metal straw.

Jaya at the Setai| Chili Passion Martini

  • 1.0 oz House Made Chili and lemongrass-infused Vodka
  • 1.0 oz Passion Fruit Rum
  • 0.75 oz Passion Fruit Purée
  • 0.5 oz Cranberry juice
  • 0.25 oz Ginger Syrup, Chili Flakes 

Directions: Combine all ingredients into a mixing glass. Add Chili flakes. Shake with ice and pour into a Martini glass. Garnish with Thai chili.
