Sexy Fish, a renowned global destination known for its innovative cocktails and Japanese-inspired cuisine, is introducing its latest cocktail series called ‘UNITY’. This exciting new menu will be launched in the restaurants located in London, Miami, and Manchester on Friday, May 17.

After the successful releases of TRINITY in 2023 and SYNERGY in 2022, UNITY represents a new chapter for Sexy Fish. Departing from traditional cocktail offerings, this menu aims to push boundaries and embrace global drinking trends. With a fresh and groundbreaking approach to modern mixology, UNITY is guided by its definition as “the state of being united or joined as a whole.” It takes into consideration the alcohol content and prioritizes enhancing the overall guest experience.

UNITY is a cocktail menu designed for the modern age. It features 12 core serves that are based on 12 distinct flavor profiles. Each serve is available in alcoholic and non-alcoholic versions, allowing guests to choose according to their preferences. With a total of 24 cocktails to choose from, guests simply need to select their desired key flavor and base alcohol level. This personalized approach ensures an inclusive and mindful drinking experience for everyone. The core flavors include Pineapple, Cacao, Honey, and Sugar Snap Pea, among others. The Pineapple cocktail ($19) showcases the unique blend of flavors from pineapple peel-infused The Lost Explorer Espadín Mezcal, roasted pineapple fruit, basil, agave lime, and coriander. If you prefer an alcohol-free option, the Pineapple mocktail (£6) is crafted with The London Essence Co.’s roasted pineapple soda, green pepper, banana, and chipotle.

For a refreshing and herbaceous choice, try the Sugar Snap Pea cocktail ($17). It combines Ki No Bi Kyoto Dry Gin with sugar snap pea, thyme, manzanilla sherry, absinthe, apple, and lemonade, enhancing the natural aromas of the sweet sugar snap pea. The non-alcoholic version, Sugar Snap Pea mocktail ($12), features Seedlip Garden 108, sugar snap pea, pear, jasmine, and verjus. It captures the essence of an English summer garden and makes for the perfect seasonal spritz.

If you’re looking for a lower alcohol content option, consider the Cacao cocktail ($14/$17). It features Low ABV Haku Vodka, Everleaf Marine, cacao, dark chocolate, vanilla, merlot, and bitter. Its alcoholic counterpart, the Cacao cocktail ($21), boasts Absolute Elyx Vodka infused with cacao butter & dark chocolate, Sauternes, Lillet, and lemon.

The meticulously crafted selection of beverages at UNITY has been expertly curated by Xavier Landais, the esteemed Director of Bars at Caprice Holdings. Collaborating with his team of skilled bartenders, including James Hawkins, the Group Head of Bars, Kendall Hauer, the Head Bartender in Miami, and Sam Page, the Head Bartender in London, Landais has dedicated months to developing a drinks list that goes above and beyond in meeting the desires of consumers at Sexy Fish.
